| 2006 CABERNET SAUVIGNON |
Varieties: Cabernet Sauvignon 98% Merlot 2%
Region: McLaren Vale, South Australia
Vineyard: Norm & Jane Doole’s, Norjan Vineyard, California Road, McLaren Vale.
Vintage conditions: 2006 will be remembered as one of the earliest and shortest vintages on record for the McLaren Vale region. After a mild, wet winter in 2005 the vines faced difficult conditions in Sept/Oct with varied damage to leaves and shoots. Subsoil moisture was high resulting in some large canopies which required trimming, though our vineyards remained disease free despite the cool, moist conditions experienced from Nov-Dec. A hot burst after Christmas was followed by a cooler February, resulting in even ripening conditions with fruit displaying good varietal character, ripe tannins and retained acid. March was generally warm to hot with excellent harvesting conditions. Though late March saw rain and rapid cooling into April, most of the district's fruit had already been picked The Norjan vineyard’s balanced canopy delivered fruit in optimum condition with good sugar levels, richness of colour and excellent acid/tannin balance. Technical information: The fruit was picked at 13.8ºBé, crushed and rotary fermented for six days. Fifty percent of the juice was run off into a mix of new and one-year old Seguin Moreau medium-toast French oak hogsheads and barrel fermented to dryness. The other half was fermented to dryness and then transferred to barrel for maturation. Analysis: Alcohol: 14.5% TA: 7.5 g/L pH: 3.45 Res.Sugar 2.4 g/L VA: 0.68g/L SO2: Free 34mg/L Total: 105mg/L Tasting Notes: Deep red in colour. A complex nose of ripe, sweet, dark berries and currants with Cabernet mintiness evident and a touch of coffee from the oak maturation.
The palate is rich and full featuring long, savoury and dark-berried flavours and cabernet choc-mint characters. Aged in a combination of new, second and third use French oak hogsheads the oak is very well integrated leaving the wine with a soft, rounded tannin finish. Our seventh release of Cabernet Sauvignon, the 2006 will drink exceptionally well over the next 6-8 years.
Bottled 15th May 2008.
